Ingredients

  • 4 Medium Zucchinis
  • 8 Roma Tomatoes
  • 1 Yellow Onion
  • 2 Tablespoons Freshly-Grated Pecorino Sardo
  • 1 Sprig of Mint
  • Salt (to taste)
  • 5 Tbsp Obìa Extra-Virgin Olive Oil

Directions

Step 1

Finely dice onion, tomatoes and zucchini.

Step 2

In a large pan, sauté onions in Obìa extra virgin olive oil until translucent. 

Step 3

Add tomatoes and stir well, allow to simmer for 5 minutes. 

Step 4

Heat a large skillet (nonstick or cast-iron) or griddle over medium. Fold a sheet of paper towel in half, and moisten with oil; carefully rub skillet with oiled paper towel.

Step 5

Add the zucchini, stir, and cover with a lid for 15 minutes, stirring occasionally and adding water or oil as needed to prevent sticking.

Step 6

Garnish with fresh mint and pecorino cheese.
