Cheesy Butternut Fregula


Preparation:10 Minutes
Cooking: 30 Minutes
Total: 40 Minutes
Portions: 4 people
Ingredients:

Method:

  1. Finely dice onion and cube the squash.
  2. Heat olive oil in a deep pan over medium.
  3. Add onions and cook until golden and translucent.
  4. Add butternut squash and a few sprigs of rosemary and saute for 10 minutes, stirring regularly. Remove any woody rosemary sprigs. 
  5. On high heat, add the fregula and wine and allow to cook until fully evaporated, while stirring constantly.
  6. Once the wine is evaporated, lower heat to medium and add 1 cups of broth. Continue cooking and stirring, adding more broth as needed (much like a risotto) until the fregula is soft. (about 12-15 minutes).
  7. Add the grated cheese. Stir well and let rest for a few minutes.
  8. Season with salt and pepper to taste. Top with parsley and serve immediately.
