Portions: 4 people
- 320g (11oz) Fregula (or substitute Durum Pearl Couscous)
- 400g (2 Cups) Cubed Butternut Squash (or Fresh Pumpkin)
- 200g ( 1 Cup) Freshly Grated Pecorino cheese
- 1 Small Yellow Onion Diced
- 1/2 cup White Wine
- About 2 Cups Broth

A few sprigs of rosemary (or substitute dry rosemary)
- Obìa Extra virgin olive oil
- Salt to taste
- Black pepper to taste
- Parsley to Garnish
Method:
- Finely dice onion and cube the squash.
- Heat olive oil in a deep pan over medium.
- Add onions and cook until golden and translucent.
- Add butternut squash and a few sprigs of rosemary and saute for 10 minutes, stirring regularly. Remove any woody rosemary sprigs.
- On high heat, add the fregula and wine and allow to cook until fully evaporated, while stirring constantly.
- Once the wine is evaporated, lower heat to medium and add 1 cups of broth. Continue cooking and stirring, adding more broth as needed (much like a risotto) until the fregula is soft. (about 12-15 minutes).
- Add the grated cheese. Stir well and let rest for a few minutes.
- Season with salt and pepper to taste. Top with parsley and serve immediately.
